vegetarian meal plans

Craving lots of my mama’s food this week so I’m throwing in the Seitan con Papas and Tamales for a bit of home with a vegetarian twist. I’ve only planned through Friday, but am hoping to get some inspiration for those meals as the week progresses.

Breakfast: Tacos!
Packed Lunch: Leftover Black Bean Veggie Chili | Fruit | Nut-Seed Mix
Lunch for Us: Nachos
Dinner: Pizzas & Crispy Romaine Salads with Garlic Lemon Vinaigrette

Breakfast: Yogurt and Granola
Packed Lunch: Leftover Pizza and Salad | Muffin | Fruit
Lunch for Us: Tomato Soup | Salads
Dinner: Seitan con Papas | White Rice with Sweet Plantains | Elotes

Breakfast: Protein Smoothies & Muffins
Packed Lunch: Leftover Rice | Black Beans | Corn
Lunch for Us: Waffles | Yogurt | Peaches
Dinner: Macaroni & Cheese** | Grilled Vegetable Salad | Mixed Greens Salad

Breakfast: Banana-Pecan Pancakes
Lunch: Leftover Picnic at Home
Dinner: Taco Salads | Agua Fresca

Breakfast: Baked Eggs | Hashbrowns | Toast
Dinner: Ricotta & Chard Tamales | Roasted Tomato Salsa
