I made the mistake of buying some spinach on my last trip to the grocery store, knowing full well that I had spinach coming in my CSA box a couple of days later. And yup, I ended up with a fridge full of the green stuff. I’m sure lots of you are swimming in winter greens as well, so I thought a link-up of sorts was well timed. Enjoy!

Soups & Stews:
Winter Greens Soup*
Lentil Minestrone Soup
Red Lentils with Lime** over Basmati Rice
Braised Coconut Spinach & Chickpeas with Lemon

Salads:
Our go-to is a spinach salad with pears, walnuts, feta and a homemade balsamic vinaigrette.
Spinach, Feta & Blood Orange Salad

Pastas:
Spinach, Tomato & Ricotta Stuffed Shells
Added spinach to Spaghetti with Lemon & Olive Oil  (our version pictured above)

Wraps:
Homemade version of The Green Cart’s Aegean Mediterranean Wrap

Breakfast & Other Ideas:
Spinach and Feta Quiche
Spinach Omelets
Spinach Enchiladas
Pizzas!
You can always throw a handful of spinach in a smoothie, too.
