vegetarian meal plans

My daughter is officially on summer break as of Friday and we are going to spend the week trying to find a new rhythm. With respect to food, I’m thinking she’ll have more time to help in the mornings with breakfast and I am hoping that she can play a major part in dinner prep at least once or twice a week. We’ll be getting out for lots of park and pool time for the next couple of weeks before it gets to be 100º everyday so lunches will be on the go and picnic-style for the most part.

So… plans are loosey-goosey for this week:

Breakfast
Homemade Muffins & Fruit & Juice
Summer Veggie Tofu Scrambles
Migas
Yogurt with Mexican Style Granola
Egg Sandwiches with Pesto, Veggie Sausage and Arugula (got idea from here)
Pancakes

Dinner
Summer Bean & Vegetable Soup with Pesto*| not sure what with yet
Roasted Beets, Goat Cheese & Avocado Sandwich | Grilled Zucchini Pepper Salad
Green Beans with Tahini Basil Sauce | Quinoa | Side Salads
Soba Noodle Stir Fry | Edamame and Corn Salad**
Posole or Tortilla Soup | Cucumber Salad

Lunch
Dinner menu reconfigured or pared down in smaller portions

Other Stuff
Cookies!
Tortillas
Big Ol’ Pots-O-Beans for stocking up
Red Stock*
Homemade Salsa Fresca
Energy Bars
Pancake mix for gifting
