My daughter is officially on summer break as of Friday and we are going to spend the week trying to find a new rhythm. With respect to food, I’m thinking she’ll have more time to help in the mornings with breakfast and I am hoping that she can play a major part in dinner prep at least once or twice a week. We’ll be getting out for lots of park and pool time for the next couple of weeks before it gets to be 100º everyday so lunches will be on the go and picnic-style for the most part.
So… plans are loosey-goosey for this week:

Roasted Beets, Goat Cheese & Avocado Sandwich | Grilled Zucchini Pepper Salad
Green Beans with Tahini Basil Sauce | Quinoa | Side Salads
Soba Noodle Stir Fry | Edamame and Corn Salad**
Posole or Tortilla Soup | Cucumber Salad
Dinner menu reconfigured or pared down in smaller portions
Big Ol’ Pots-O-Beans for stocking up
Homemade Salsa Fresca
Pancake mix for gifting
