one-bowl whole wheat pancakes

We really look forward to lazy, pajama-clad mornings where we mosey about and breakfast happens when it happens. Food begins with some fruit and from there we transition into some reading/lounging with some coffee or freshly squeezed juice in hand. Tummies start to grumble and we finally get to the business of putting a meal on the table. These fluffy whole wheat wonders are awesome ’cause they come together in the few minutes it takes for your griddle to warm, so no need to shake off lounge mode.

One-Bowl Whole Wheat Pancakes
makes 8-10

1 cup whole wheat flour (4.5oz)
1 teaspoon baking soda
1 large pinch of salt
1 cup of buttermilk
1 egg, beaten
+ Butter or oil for griddle

  1. Warm butter or oil on griddle over low heat.
  2. Add first three ingredients to bowl and mix together with a whisk.
  3. Add buttermilk and egg to same bowl and whisk together until flour is completely incorporated. (I sometimes add a few extra tablespoons of buttermilk if it’s too thick.)
  4. Turn heat up to medium.
  5. Add ¼ cup of batter to griddle and let cook until bubbles form around edge (about 1 minute). Flip to cook other side.

We reserve our pear butter specifically for these occasions, but they also go well with a bit of fruit and honey or a classic dose of maple of syrup.
