This is a great little cookbook for winter cooking. It is basically my December CSA box. Vegetable-focused sides, salads, mains, and even breakfasts to use up those collards, sweet potatoes, and root veggies. Eat Your Books hasn’t indexed it yet, so a quick list of some of my favorites:

  • Fluffy Sweet Potato Biscuits
  • Pecan Sweet Potato Granola

  • Veggie Mineral Stock
  • Pan-fried Butter Beans and Greens
  • Bourbon BBQ Tempeh Sandwiches

I’ll be pulling together our New Year’s meals together from this book almost exclusively so pick up a copy at your library or with one of those gift cards you got over Christmas.
