It got down to a chilly 92° mid-afternoon and we got a bit of rain. The entirety of Austin was celebrating and running outside to witness it. The bit of grey seems to have stuck for the remainder of the day and made my fall cravings kick in. Soup was in order!
This week’s CSA yielded a mix of peppers and zucchini and I had some cabbage leftover from last week. In search of something a little more exciting than cabbage and bean soup, I hit the old cookbook shelves and dug up this old favorite (published in 1996).
Basque White Bean Soup* for dinner! Shredded cabbage, minced bell peppers, zucchini (in place of butternut squash), Rancho Gordo Royal Coronas, and a solid pinch of saffron at the end of its simmer to brighten up the bites. Just what our bellies were craving and we’ll just pretend that the air outside isn’t thick and heavy with humidity and a heat index in the high 90s.
