If a vegetable could embody a country song… it would be okra. Just when you think you’ve found a way to love it, someone gives it the side-eye, throwing your love dance into a stomp.
Backstory:
I was happy as I cut this okra, crosswise instead of lengthwise. Everyone at the table liked it the other day when I did this. There was zero okra left after dinner which is the best possible evidence of nobody feeling meh about the okra, right?! I thought I had unlocked the secret for embracing the never ending stream of summer okra and that we had magically morphed into an okra-loving family.
Then… I served lunch.
There were some deep sighs and grumbles about okra “again?” and woo-boy was my okra-loving family bubble burst! To be fair someone wasn’t feeling well and this was healthy, seasonal meal number 5 or 6 in a row. The sigh was due to a lack of cheese more than anything, but okra! I thought I had unlocked the secret to loving okra!
So… long story short: We loved and ate all the okra even though the entire family is not *in love* with okra and I have most certainly not unlocked the secret to making okra ubiquitously loved.
Cutting your okra crosswise into coins and roasting in a super-hot oven does make it deliciously crispy and the right amount of gooey on the inside though. Highly recommend.
