Did a solid clean out of the fridge this morning and my heart is singing at the sight of more green things (that are not zucchini) in my CSA haul! We are ready for some new cooks! Here’s what I have planned so far:
- Alubia blanca and potato stew
- Grain salad with sprouts, nuts and avocados
- Ravioli (basil, ricotta) in tomato broth
- Greens and grains scramble (chard, millet)
- Rice noodle bowls or pad thai
- Bowls: calabacitas, frijoles negros, grain and pepitas
- Pizzas (mushrooms & peppers, arugula & cheese)
- Sourdough pancakes
- Oatmeal sandwich bread
- Zucchini bread (with what may be the last of the squash)
- Sweet potato purée (for future waffles and pies)
- Arugula pesto (with whatever is left after all that up there)
Now all we need is some rain in Central Texas to match up all these fall eats to the weather.
