I’m sure there is a science to it that has something to do with neural connections and whatever part of the brain manages emotion, but learning a new skill is one the coolest feelings ever. Doing that new thing with your hands and having something you can eat at the end of it? That feels like magic.

200 grams of tofu and 2 liters of water = quart of soy milk and block of tofu

My current new thing? Making tofu from scratch. Process is pretty similar to making cheese but instead of milk you start with soy beans which turn to soy milk and then you do the curdling step, scoop curds, press, and voila! Tofu! Waiting for stuff to cool enough to handle is probably the most time-consuming element. I may be hooked.

My soy milk tastes a little more beany than I care for, but that just gives me something to work on improving. The tofu is the best tofu I have ever had. Still, lots of experimenting to do! Silken tofu, different coagulants, less beany milk… this 13-lb bag of soy beans is gonna be put to good use.
