redemption tofu

Yesterday’s late night batch of tofu was a bust. It didn’t coagulate enough and my tired rescue attempts didn’t work. In retrospect, I shouldn’t have tried on such a spent brain because I didn’t have it in me to troubleshoot a thing.

So tonight… I made another batch. I started earlier, took my time, and with slightly shattered confidence proceeded with my cookbook guiding every step. I got nervous when my coagulation wasn’t as speedy as usual but just kept plugging away, remembering that cooler-temp milks take a bit more coagulant. It worked and I just finished the most satisfying step of the process – turning the pressed tofu, still wrapped in cheesecloth, out into fresh water so it can finish firming up ahead of storage.

Just what my brain and heart needed – a process to guide me through and a product to enjoy at the end of it.
