week 23 meal diary

On June 1, I picked up my first 10lb box of tomatoes. The week held some canning, batches tofu, beans, our latest favorite noodles, and lots of tomato sandwiches. This was a relatively cookbook-free week with most meals getting pulled together from available veggies on hand and tomatoes.

Monday

The first Monday of every month feels like a marathon because I have my commission meetings. I was still nursing my leftover cold so breakfast was the only meal I managed to cook. The rest of the day held leftovers.

Tuesday

More leftovers and bits but the day was made whole with a glorious pizza salad from Terry Romero’s Salad Samurai.

Wednesday

We finally made a trip to Ranch 99 way up north, so we are flush with noodle options! Quick noodle bowls are back. Our morning tofu scramble had tomatoes (duh) and bell peppers and this might have been the third day in a row that featured a tomato sandwich for either a meal or snack.

Thursday

Pinquitos make a great BBQ bean. Shortcutted a version that adds bottled sauce to already simmering stovetop beans and made a quick mash for this weeknight dinner.

Friday

Saturday

Still had tomatoes so we had a pizza salad repeat. Did not disappoint.

Sunday

Quick sesame noodle bowls at some point, but all I really remember is canning gorgeous golden romas.
