Sometimes, when the house goes to sleep a little ahead of schedule, I get lots of stuff going in the kitchen. Tonight, I cooked lentils and quinoa. I am roasting vegetables. I made a lime-cumin vinaigrette and am considering whether or not keeping the oven going longer will make the sleeping contingent upstairs too hot. It feels crazy to tear up a clean kitchen at 9:00 at night, but I have never regretted the bounty of food that comes from these late night sessions. Tomorrow’s lunches will be much better for it. 😉
