october meal ideas

It may be October, but our CSA box was still thick with summer this past weekend! Eggplant, summer squash, okra, peppers, and cucumbers galore. We had our first bit of greens start to peek in though, too. These transition months can always be a little tough to figure out with regards to meal plans. I always feel like I need to have a few backups in mind in case it’s too hot for the stew I had planned and vice versa.

I turned to some of the steadiest books in my cookbook collection for ideas in the coming weeks. Linked to as many recipes as I could and reference the book in Eat Your Books everywhere else.
