It may be October, but our CSA box was still thick with summer this past weekend! Eggplant, summer squash, okra, peppers, and cucumbers galore. We had our first bit of greens start to peek in though, too. These transition months can always be a little tough to figure out with regards to meal plans. I always feel like I need to have a few backups in mind in case it’s too hot for the stew I had planned and vice versa.
