Can we get a hip hip hooray for edible weeds?

I struggled at first with dandelion greens, but have come to love their grassy, peppery, bitter bite. They make a perfect addition to one of my favorite fall weekday soups of broth + beans + greens. It’s also great in fresh salads where you want a slightly more complex flavor than lettuce alone offers. Or just tossed in a bright and sweet citrus vinaigrette as a side salad.
