It is January all of a sudden and I am feeling super energized after a nice long break. We take a pretty laid back approach to the holidays, so we end up eating at home a lot over the break. And once January kicks in, we’re kind of in a groove. Things will get busier and it is when that whirlwind of places to be and things to do and people to see that things get challenging.
Having the right things on hand to devise quick meals helps a lot. I start with a solid stash of veggies and greens to help add some color and variety to pantry items. This week I am working with:
- broccoli
- kale
- bok choi
- beets
- rutabaga
- carrots
- kohlrabi
- arugula
- cilantro
- collards
- grapefruits
