freeze in portions

A gentle reminder to put things up in the freezer in small portions. It makes them infinitely easier to defrost which just means you’ll be all the more likely to actually use those bits you put up in the freezer.

My current favorite is refried beans. Nothing earth shattering, but my homemade refried beans make tacos possible on a whim and are infinitely better for us than the canned refried ones available at the grocery store.

Rice in ¼ and ½ cup portions is also coming in handy. To defrost, place your rice scoop in a bowl and cover bowl with a damp clean kitchen towel and reheat in microwave for 2-3 minutes.
