So, you see that loaf in the picture? It is a 100% whole wheat sourdough bread and wow wow wow. It actually rose and is in the shape of sandwich bread and we are celebrating it. It is not perfect, but it is worth perfecting. I will get a better rise by feeding the sourdough a few times in advance of the loaf and maybe i’ll switch to a no-knead and overnight proof. All I know for sure is the days of heartier and nuttier whole grain breads are back and I am stoked.
