You know when you start driving a new car and then all of a sudden as you are driving around town you see your car everywhere? Well, I feel that way about tofu right now. Tofu on the brain. Tofu recipes. Tofu coagulents. Tofu presses. I somehow even ended up with this cat named Tofu in my Bluesky feed!

Andrea Nguyen’s Asian Tofu has been keeping me company as I learn my way. It is thorough and instructive and a world’s better experience than trying to watch a bunch of Youtube videos(at least for me). I made some more blocks of firm tofu with her recipe and they are much improved from my first experiments. This weekend, though, has been about silken tofu – little pots of steamed tofu. The whey separated beautifully and clear and I can’t wait to try some in meals this week.

We’ll be having tofu scrambles with CSA veggies. pan fried bits in our bowls at lunch, and I have my eye on some of the soups in Nguyen’s book, too.

Improved drinking milk still on the wish list. And if any of y’all know where I can source gypsum locally, let me know.
