Back in a groove with CSA and actually trying to play a bit of catch up with carrots and lettuce. We will have all the salads this week – salad sides, salad entrees, sandwiches with lettuce… you name it. Why do we have so many carrots on hand if we love them? Who knows… but a few of my ideas for tackling the multiple bunches:
- Morning glory oats1
- Carrot & ginger fried rice
As simple as it sounds – grated carrots, grated ginger, some garlic, maybe some greens chopped finely if you have them on hand. - Cornmeal carrot cake2
- Whole wheat carrot bread
This loaf is glorious and the bit of brown sugar and carrot give it just the right amount of sweet for toast and sandwiches. - Lentil salad with grated carrots and mustard vinaigrette3
If you don’t have access to the newsletter, your fave mustard vinaigrette with a firmly cooked lentil of any kind and grated carrots, bit of garlic does the trick
The carrots are delicious and we love them so I should just take a bit of time to clean and grate them… or you know… leave them out on the counter instead of cookies.
