With no littles underfoot and an even quieter holiday break than usual, I leaned into some recipe testing the past couple of days. Conchas are my pan dulce of choice, and when fresh are hard to beat. They are tricky and time-consuming little rolls with various sticky and messy stages required to get them just so.
This time around, decided to dive into my winter citrus, spiking the whole wheat dough with some orange zest and decided to spend a bit more time on the sugar topping. I went with the more traditional confectioners sugar base (with fresh ground Mexican cinnamon on half and dark chocolate on the others).
They took me all day and are far from perfect but our morning cafecitos are def a little more luxurious for the next few days. Chocolatey. Orangey. Cinnamon. Just what we needed as we roll out of and into new holiday downtime rhythms.
