getting the meal-planning umph back

so i had been doing really well with my weekly menus. really, really well. and now, i’m back to planning a meal at a time and having trouble thinking farther out than breakfast tomorrow.

with that said, my plan so far includes classic veggie sandwiches and more mixed green salads with the pomegranate from yesterday, maybe mexican lentils (my fave), been craving a dal, empanadas would kick ass as would some pot stickers and/or spring rolls. i guess that is more of a wish list than a plan.

let’s see where i land tomorrow morning after i inspect the pickings at the grocery store.

still trying to figure out what leads these highs and lows in meal-planning.
