After a long weekend of indulging in quite a bit of eating out, we are going to spend the next week eating from home. We have a solid 5 days before our next CSA pickup which may make it a bit more tricky, but I still have a decent amount of produce left to work with – tomatoes, cauliflower, cabbage, red onion, carrots, kale, sweet potatoes, apples, citrus, cilantro, and parsley. Pantry of legumes and […]
We had to skip our CSA pickup this past weekend and I have not had time to hit one of the other local markets since, so the fresh veggie contingent in our house has been reduced to the handful of staples that are essential to a Mexican kitchen – tomatoes, onions, cilantro, potatoes, and chiles. So this week, I am going to hit my week of cooking with my mama in mind. Comida mexicana all […]
Just last week I was going on and on (and on) about how much I LOVE the short winters here. Scarves and warming the house with the oven and boots and snuggling under warm blankets. Oh well… all I can hope for now is that the weather outside is short-lived because I am not ready for it to be warm again. My cravings haven’t quite caught up with 60-70º temperatures either, so I have stews […]
We’ll be hitting the leftover stash this week and working our way through the last of our CSA veggies. A bi-weekly schedule with one trip to the farmers’ market for a few “special” things in between pickups has worked like a charm – no rotting food, no panicked MUST-COOK feeling, and just enough variety to keep us from feeling like we are on repeat every week. The introduction of juicing into the house has meant […]
This time of year always feels like a mad dash to the end. 2012 is going to be no different. Work is going to kick our behinds and I am gonna have to work some serious weekend-cooking magic to keep us fed during the few work weeks that we have left in the year. Keeping it even easier than usual to make sure that we don’t wander off to too many restaurants for dinner.
This week and all its busy is going to flash by so I’ll just get right to what I am hoping to pull together for us this week in the kitchen: Meals Winter Squash Soup | Classic Veggie Sandwiches Enfrijoladas | Rice | Skillet Roasted Sweet Potatoes Hummus Wraps with Roasted Red Peppers, Greens & Olives Kale, Cabbage & Carrot Chopped Salad Chana Masala Other Stuff Banana Oat Muffins Chipotle-Honey Granola Pumpkin Puree Vegetable Broth
The list of things to do this week is weighed down heavily with things house, kitchen and Halloween. Gonna keep the food simple and familiar this week so that I don’t just end up making my lighter work week heavy in other ways. I deserve an easier week. Meals Lentejas (Ancho Lentil Stew) Pasta Dinner (TBD) Mung Beans & Rice with Spicy Tomatoes* Taco Night Breakfast Banana-Oat Muffins & Smoothies Almond-Milk Oatmeal & Apples Bean […]
Check what you have before pulling a meal plan together. Repeat. It may seem like the most obvious of steps, but I can’t tell you how many times I skip the physical step of opening the fridge and then end up planning an entire meal around a spinach that there are only 5-skimpy leaves of. Doh. I checked the fridge this week…
Saturday is when I tend to have time to think through what to eat in the coming days and subsequent week. I bust out the vegetarian cookbooks, visit the downtown library stacks for inspiration and check out what is buried in my Evernote stash of bookmarked recipes. I also try to keep my actual calendar close at hand to make sure that my “lofty” plans mesh well with the busy of the week.
