chopped veggies for potato-chickpea stew

We have seven weeks left of our summer break which means that it is time for me to step it up. I have ingredients for a full seven meals on hand right now and I am hoping that I can crank through it all by the middle of next week (at the latest) and have lots of leftovers on hand for lunches. Also hoping that I can whip my breakfast planning back into shape.

Meals:
Potato Chickpea Stew* (simmering now) | Spinach Side Salads
Spinach & Feta Quiche | Arugula Salad with Peaches & Creamy Vinaigrette
Enfrijoladas | Rice & Beans
Cream of Tomato Soup | Cuke & Cream Cheese Sandwiches
Mung Beans & Rice with Spicy Tomatoes*
Black Bean & Soyrizo Sopes | Sopa de Ajo
Kadai Masala

Breakfast:
Yogurt and Mexican Granola
Black Bean & Potato Tacos
Baked Eggs & Homefries
Brown-Sugar Oatmeal with Bananas & Nuts
Zucchini Muffins & Fruit

Snacks:
Cauliflower Pasta Salad with Mustard Vinaigrette*
Grilled Zucchini & Pepper Salad
Cantaloupe Agua Fresca
Cantaloupe Popsicles
Strawberry & Mango Smoothies
Chocolate Chip Cookies

      its your basic granola (linked up a rick bayless recipe that inspired it years ago that has peanuts and other nuts in it. a little coconut or dried mango adds some nice punch, too. 🙂

      i’ve updated a few of the week’s items with links. i hope that will be of help. trying my darndest to annotate as i go with everything else and am hoping that i can start posting more of my original recipes soon.

      its a pretty ambitious plan for the week, so i’ll see how it all actually pans out. 😉
