vegetarian meal plan - august, 18, 2013 | aneelee.wordpress.com

We are running dangerously low on vegetables in the house. We have hot peppers. We have potatoes. We might have half of a small red onion left and a butternut squash. CSA pickup is not until Wednesday and that small stash is going to have be stretched into 3 breakfasts, 3 lunches, 2 dinners and snacks. These are the kinda weeks when I am most grateful for my homemade pantry. Breakfast Skillet Potatoes & Poached […]

We’ll be hitting the leftover stash this week and working our way through the last of our CSA veggies. A bi-weekly schedule with one trip to the farmers’ market for a few “special” things in between pickups has worked like a charm – no rotting food, no panicked MUST-COOK feeling, and just enough variety to keep us from feeling like we are on repeat every week. The introduction of juicing into the house has meant […]

My meal plan is a bit late in coming this week, because I was hoping to plan at least some of my week around the swapped goods I acquired at ATXswappers on Monday. If you live in Austin and have yet to make your way to one of them you MUST give it a try. It is my absolute favorite food happening in town. The basic premise is that you make something yummy at home, […]

Check what you have before pulling a meal plan together. Repeat. It may seem like the most obvious of steps, but I can’t tell you how many times I skip the physical step of opening the fridge and then end up planning an entire meal around a spinach that there are only 5-skimpy leaves of. Doh. I checked the fridge this week…

Dude. Summer break is officially over. I deposited her at school this morning and the reality of filling my days starts now. Took the morning to get some work done after what I hope is the first of many early morning breakfast dates with him. Hard to switch gears so I am finding my way to a new groove with a simple plan for the week. Meals Pasta in Pesto | Crispy Baked Eggplant | […]

Saturday is when I tend to have time to think through what to eat in the coming days and subsequent week. I bust out the vegetarian cookbooks, visit the downtown library stacks for inspiration and check out what is buried in my Evernote stash of bookmarked recipes. I also try to keep my actual calendar close at hand to make sure that my “lofty” plans mesh well with the busy of the week.

Last week’s meal plan got thrown to the wind as soon as it sunk in that lots of baking had to happen in 100º+ weather. I didn’t have much left in me come dinner time and I was thankful that we had lots of leftovers and pasta on hand. So, this week, I owe my family lots of home-cooked meals. I’m craving soup, but have not yet figured out what kind. I’ll ready the fridge […]

We’ve made a really simple switch this past week. We pulled down the grocery list that lives on the fridge door and replaced it with a What We Got list, switching the focus from what we need (or want) to what we actually have living beyond the doors. This tiny little list has made a huge difference in our interactions with the beast that is the fridge. We’ve actually been working our way through all […]

My plans for a quiche and soup dinner last week were squashed by the heat, but I think that we may be nearing more seasonally appropriate temperatures (for Central Texas ayways) so I shall forge ahead with more plans for hearty meals and a couple that even require the oven. Dinner: Split Pea Soup | Sourdough Bread | Crispy Salads with Buttermilk-Ranch Dressing Greek Salad with Orzo and Black-eyed Peas Spaghetti in Tomato & Almond […]

Craving lots of my mama’s food this week so I’m throwing in the Seitan con Papas and Tamales for a bit of home with a vegetarian twist. I’ve only planned through Friday, but am hoping to get some inspiration for those meals as the week progresses. Monday Breakfast: Tacos! Packed Lunch: Leftover Black Bean Veggie Chili | Fruit | Nut-Seed Mix Lunch for Us: Nachos Dinner: Pizzas & Crispy Romaine Salads with Garlic Lemon Vinaigrette […]
