We only ate out once last week!
I’m gonna try my best to keep up with that pace, so I’m gonna keep the heavy cooking to a minimum this week. This week’s CSA box was filled with lots of fresh greens that will make the salads and clear broth soups that our bodies are craving way easy.
Dinner:
Potato & Kale Tacos | Arroz Negro | Black Beans
Potato & Chickpea Stew (didn’t get made last week)
Sunflower-Crusted Field Roast | Mashed Potatoes | Barbecue Style Lima Beans
Spinach and Feta Quiche | Mixed Greens with Strawberry Vinaigrette
Taco Salads
Sesame Soba Noodles with Cucumber, Bok Choy, and Mixed Greens
Tortellini & Escarole Soup
Snackage:
Hummus
Nachos
Peppered Tofu Crisps with Cashew Tamari Dressing
Breakfast:
Our regular rotation (Yogurt & Granola, Oatmeal, Breakfast Tacos, Cereal)
Eggs | Beet “Sausage” Patties | Homefries
Steam-Fried Eggs | Refried Beans | Corn Tortillas
Waffles | Fresh Strawberries | Maple Syrup
Other stuff:
Potato Bread
Salsa Verde
Note: Last week’s Olive-Lentil Burger dinner pictured above. Gonna give another whirl in a few weeks with the grill and more classic fixings.
I am craving greens too after all those baked goods! An olive lentil burger sounds amazing, I am going to have to try it!
i was a huge fan of last week’s burger. served them open-faced, cause they ended up being huge.
only a few cookies left in the house. thank goodness! 😉
