What’cha snackin’ on today? We’ve been munching through pounds of carrots. Plain, dipped in hummus, or cut into coins and popped like popcorn. So good. 12yo loves the yellow ones best lately.
dandelion greens, spinach, kale, fennel, parsley, radishes, beets, carrots, mixed greens, spring onions, leeks, artichokes, parsnips, broccoli
Thought it would be helpful to see how much produce we have left about halfway though our CSA pickup cycle (we get a Large share from JBG on a bi-weekly schedule). We started with all of this on March 23. Our next pickup is 6 days out. I’ll be making it through the week with the folllowing and some help from the pantry: ½ bunch of kale Handful of Spinach ½ of a red cabbage 1 […]
Have been working from my handwritten notes for this week’s meal plan. Haven’t quite cleared through the rough (my turn in bed started a couple of nights ago), but we are getting there. He has been an absolute champ and is bringing the smiles full on. Love him. Digital capture of the analog meal plan below: Cheesy BBQ Vegetarian Loaded Potatoes One-pot Creamy Lentils
I got a really solid start on cooking over the weekend and thought I should take advantage of this moment to talk about what my weekend vegetable prep looks like. A CSA share can be intimidating for the uninitiated – it is A LOT of vegetable to deal with at once, but it is totally possible if you can set aside the time to properly wash and store your vegetables as soon as you get […]
We went to the market this morning to pick up our CSA stash (the first of the Spring) and could not resist these little beauties. Also came home with sweet potatoes, carrots, brussel sprouts, collards, kale, spinach, lettuce, radishes, beets, daikon, cabbage and spring onions. Will spend the better part of Saturday cleaning and prepping everything for the week. As for the artichokes… scouring the cookbook collection to stop my reflex to steam and dip in butter.
We’ve continued our greens at lunch routine and enjoyed these salad bowls over the weekend. Easy enough to pull together if you have taco fixings (rice, beans, salsa) around. In the winter I take advantage of my pickled red onion stash, radishes, and the roasted jalapeños that my freezer keeps nice and chilled for me. Winter Taco Salad mixed greens red cabbage black beans brown rice avocado radish pickled red onions soyrizo cilantro homemade salsa […]
I had a full day of meal prep yesterday, so I am stoked (and stocked) for the week. Also managed to have quite a bit of fun on Instagram yesterday in the middle of it all. Seemed like lots of folks were cooking and getting ready for the week so I was able to find some inspiration for last night’s dinner and the week’s meals. You can find me @thereal_aneelee if you want to take […]
Well, it’s mid-week so I have clearly thrown planning to the side. That said, there is plenty of kitchen action. I have been ogling my newest addition to the kitchen book shelf – Vegetable Literacy – and am re-learning the art of pressure cooking. As far as veggies go, we are just working our way through our leafy greens (there are LOTS of them). They are going in scrambles, grain bowls, smoothies, and anything else we […]
School, work, and the routines that come with it all are long overdue. Mornings may be a little rough after weeks of serving breakfast near-10am, but the rest of it should fall into place. Hope you have an easy week back and that you find a little seasonal inspiration for your meatless meals in my week’s plan.
