cooking from the pantry – may 5, 2014

Remember how the house was overflowing with veggies last week? Well… they are all pretty much gone. We have bits left. The freezer only has some tomatillo sauce and a measly pint of oven-roasted tomatoes to give, so it is the pantry (grains & legumes galore) that is doing the heavy lifting.

Baked Potatoes with Parmesan Broccoli
Macaroni & Cheese | Roasted Brussel Sprouts
Vegetarian Tan-Tan Noodles* with leftover veggies
Barbecued Tempeh Sandwiches (didn’t get around to this last week)
Chana Masala
Tunisian Chickpea Stew*

Snacks/Beverages
Mate
Sun Tea
Horchata Popsicles
Green Pineapple Juice
Milk & Honey Corn Muffins (didn’t get around to this last week, either)

Grains and legumes for breakfast, lunch and dinner with bits of veggies for color. We are going to be soooo stoked come CSA pickup day. What are you cooking this week?

    I have been cooking from my pantry a lot lately, too. Sometimes the most creative recipes come out of it…and sometimes, the weirdest food combinations. :]
