What’cha snackin’ on today? We’ve been munching through pounds of carrots. Plain, dipped in hummus, or cut into coins and popped like popcorn. So good. 12yo loves the yellow ones best lately.
We are running dangerously low on vegetables in the house. We have hot peppers. We have potatoes. We might have half of a small red onion left and a butternut squash. CSA pickup is not until Wednesday and that small stash is going to have be stretched into 3 breakfasts, 3 lunches, 2 dinners and snacks. These are the kinda weeks when I am most grateful for my homemade pantry. Breakfast Skillet Potatoes & Poached […]
We had to skip our CSA pickup this past weekend and I have not had time to hit one of the other local markets since, so the fresh veggie contingent in our house has been reduced to the handful of staples that are essential to a Mexican kitchen – tomatoes, onions, cilantro, potatoes, and chiles. So this week, I am going to hit my week of cooking with my mama in mind. Comida mexicana all […]
Just last week I was going on and on (and on) about how much I LOVE the short winters here. Scarves and warming the house with the oven and boots and snuggling under warm blankets. Oh well… all I can hope for now is that the weather outside is short-lived because I am not ready for it to be warm again. My cravings haven’t quite caught up with 60-70º temperatures either, so I have stews […]
We’ll be hitting the leftover stash this week and working our way through the last of our CSA veggies. A bi-weekly schedule with one trip to the farmers’ market for a few “special” things in between pickups has worked like a charm – no rotting food, no panicked MUST-COOK feeling, and just enough variety to keep us from feeling like we are on repeat every week. The introduction of juicing into the house has meant […]
There was no okra or zucchini in our CSA box! We do have lots and lots of greens, so my goal this week is to get it into every meal. Meals Roasted Tomato & Fennel Spaghetti | Spinach & Apple Salad Tortilla Soup (which I should really post a recipe for) Kale & Feta Quiche | Mixed Lettuce with Sourdough Croutons & Lemon Vinaigrette Tofu & Quinoa with Green Beans Vegetarian Pho Everything Else Banana […]
I have the very particular (and unusual) problem of having a daughter and husband that do not like mixing their sweet and savory. Sweet belongs in desserts. Savory belongs in meals. Then comes Fall and all those sweet potatoes. I have hordes of them that I simply cannot eat through by myself. I’ve made sweet potato rolls in the past. I dice them up and sauté them for topping tacos. I roast an occasional one […]
