meal plan – swapper edition

vegetarian meal plan - swapper edition | aneelee.wordpress.com

My meal plan is a bit late in coming this week, because I was hoping to plan at least some of my week around the swapped goods I acquired at ATXswappers on Monday.

If you live in Austin and have yet to make your way to one of them you MUST give it a try. It is my absolute favorite food happening in town. The basic premise is that you make something yummy at home, wrap it up, and trade one-for-one with folks that made equally yummy (but different) stuff in their kitchens.

I love seeing what folks are cooking up at home. This time around there was kombucha, home-brewed cider, preserves, fresh produce, sweet treats and I am certain that I missed at least one table of goodies all together. I am most pleased when I get to bring something home that I would have never tried making on my own. Chutney wins that medal this go around and I am stoked that I can add it to this week’s meal plan.

Meals
Macaroni & Cheese | Roasted Vegetables
Chana Masala | Basmati Rice
Roasted Tomato & Fennel Soup | Arugula Salads in Balsamic Vinaigrette
Chickpea & Kale Wraps with Tamarind-Date Chutney (swap item)
Mung Beans & Rice with Spicy Tomatoes
Black Bean & Sweet Potato Tacos with fancy fixings

Other Swap Items

  • Backyard Eggs are already gone!
  • Serranos are going into salsa, the spicy tomatoes noted above and a small fridge-batch of pickled peppers.
  • Ketchup is going into the pantry for reserves. I didn’t make enough this summer and the half-pint might save us from the Heinz bottle come March. Phew!
  • Pistachio Truffles are goin’ in my belly.

This is what I swapped.

Hi! Great to meet you on Monday. Please let me know how you like the chutney. I enjoyed your tomato fennel soup for lunch yesterday and it was fantastic! 🙂 I posted the chutney recipe on my blog if you’re interested.
