I ended up with a little more variety than originally expected, but we seem to have eaten through way more of our veggies last week than I planned. We are running dangerously low on vegetables in the house. We have hot peppers. We have potatoes. We might have half of a small red onion left and a butternut squash. CSA pickup is not until Wednesday and that small stash is going to have be stretched into 3 breakfasts, 3 lunches, 2 dinners and snacks. We’re back in town after a quick trip to Dallas and are all craving home cooked meals. We got back late yesterday, so a detailed plan for the week, I have not. What I do have is a fridge that is stocked to the brims with fresh and home-cooked ingredients that I am hoping will get my week of cooking off to a solid start.
