Food has been about sustenance as of late and I fear that my seemingly grandiose food plans for the coming week may not match up well to the life that will be accompanying it. Shall report back on how the plan is panning out:
Meals
Ricotta & Spinach Stuffed Shells
Green Beans, Peppered Black Tofu Crisps & Rice with Cashew Tamari Dressing
Vegetarian Black Bean Chili
Facon, Lettuce & Tomato Sandwiches | Cabbage Wedges with Spicy Lime Dressing
Roasted Tomato & Fennel Soup | Side Salads with Citrus Vinaigrette
Other Stuff
Beet, Carrot & Orange Juice
Grapefruit Juice
Pumpkin Bread
Cheese Crackers
Everything in our life seems to be going through a growth spurt – business, daughter, relationships, plans, ideas – and I am stoked for all that 2013 has in store for us. Hope you all have safe and fun celebrations tonight. Happy New Year from Austin!
We actually don’t eat too much dairy round here either. It hurts our tummies when we overdo it. I usually sub some of the ricotta with tofu (as much as 1/2 or 3/4) and throw it in the processor together. Barely notice the difference.
Food documentaries can be brutal. Vegetarian stews (with beans and grains) were what helped my husband transition off meat. Super filling and vitamin packed. I’m hoping to do a few posts this January on transitioning to veggie diets… stay tuned.
I’m considering your Green Beans, Peppered Black Tofu Crisps & Rice with Cashew Tamari Dressing. Alan is lactose intolerant otherwise I’d be all over the ricotta and spinach. I watched 4 food documentaries over the weekend and am considering a huge decrease in meats. 😦
