We’re back in town after a quick trip to Dallas and are all craving home cooked meals. We got back late yesterday, so a detailed plan for the week, I have not. What I do have is a fridge that is stocked to the brims with fresh and home-cooked ingredients that I am hoping will get my week of cooking off to a solid start.

Black eyed peas
Basil
Peppers (sweet and hot)
Zucchini
Eggplant
Okra
Cucumbers
Tomatoes
Carrots (hordes of them)
Potatoes
Butternut squash
Ginger & Garlic (lots of it)
Pears
Peaches
Prepared Ingredients
Enchilada Sauce (small portion)
Roasted Spaghetti Squash
Roasted Red Peppers
Roasted Beets
Black Beans
Chickpeas
I see our first batch of Thai Tofu & Winter Squash Stew*, Greek Salad with Orzo and Black Eyed Peas, Grilled Eggplant and Olive Pizza, roasted pepper hummus, noodles and some spicy tacos amongst all those ingredients. And you see those pears? Those are going into a batch of pantry gold – pear butter.
