Picked up a handful of vegetables at the grocery store (peppers, cukes, zucchini, etc.) and am working my pantry and freezer to the max this week to help pull all of our meals together. Wish me luck as I try to cook up a week’s worth of meals without my trusty CSA stash. The 11yo starts middle school on Friday, so we are officially in reset mode. That means practicing portion control for packed lunches, getting up and being dressed (and fed) by 8am, and having a dinner plan in place for *most* nights. This is no small task if you take into consideration how slammed we have been with work and how much I have relied on eating out the past couple of weeks. Today was a […]
Last week kicked our butts, but we survived and even managed to squeeze in some quality time with my mama. Meal plans help me get my bearings in the kitchen and, in turn, the time in the kitchen helps ground me altogether. Lots of food to put up, a recipe coming later this week, and I am about to start a new hashtag to help track the fig explosion that is about to happen – #figlandia.
The weather around here has been strange (and unwelcomed, quite frankly), but our local vegetable stash is doing its best to shake it all off. Summer is here and I am cooking with it every day. We have produce in every nook and cranny of the house, so a week of cooking for meals now and for later in the year is in order. Breakfast Overnight Steel Cut Oats* Quick Breakfast Fried Rice* Summer Scramble […]
Guys, I need a whole new game plan to get us through the summer. My usual breakfast-lunch-dinner framework is not working. The 11yo has an insatiable appetite. She is hungry and scrounging around the kitchen for more food within 30-minutes of a meal and I simply can not keep up. I stocked the kitchen with grab-n-go food over the weekend and we are getting back to as a regular a schedule as work-life balance will […]
A day late, but just as yummy! We have the entire adult crew (all two of us) working from home this week so there are a few more sandwiches, snacks, and light meals in there to get us through three-to-four sittings a day. Lots of grains and legumes to help us stretch the veggies we DO have on hand till our CSA pick-up on Saturday. Check it out… Meals Tempeh BBQ Sandwiches | Potato Salad […]
We did the unthinkable over the weekend. We had to throw out produce. A cucumber, a couple of tiny eggplants, some peppers, and those darned bits of onion that I can never seem to find when I need them went from the crisper drawer to the garbage. There may have even been a zucchini in there. Sigh. It was scary and sad and a clear indication that I am not keeping up with my stash. I’ll […]
September's first meal plan with ideas for quick vegetarian dinners that can come together on even the busiest week of the year.
We will be playing along with all of you that head back to school from home this week. Getting energizing breakfasts (and coffee) out to the table in the early morn this first week of practice is always a little tough, but this is why we practice. Also braving the new world of having the 10-year-old pack her own lunch (took about 10 minutes today). Will hopefully have slightly better-oiled machine by September 2. 😉 […]
An end of summer meal plan that aims to beat the bean and taco burnout that is currently playing out in our busy vegetarian household.
