vegetarian meal plan – august 13, 2014

An obvious burnout on tacos and beans ensued over the weekend and, in turn, delayed my meal plan by a few days. I was stumped. No breakfast tacos? No dinner tacos? No bowls of rice and beans? What the what?

You’ll notice that neither beans, nor tacos are omitted from the remainder of the week’s meal plan, but rather uncleverly disguised under layers of Fritos or renamed wraps. Let’s see if I can stave off a full revolt…

Chickpea Salad Sandwiches | Butternut Squash Soup (based on this)
Lemony Summer Squash Orecchiette | Side Salads
Frito Pie with Veggie Chili
Hummus Wraps with Roasted Peppers & Fresh Veggies

Snacks & Other Stuff
Zucchini Bread (for reals this time)
Banana Ice Cream
Pineapple-Banana Popsicles

In the background we are preparing for the start of school (which has been delayed by a week) and the 10yo’s fast-approaching birthday. There are new lunch combos in the works, birthday party snack options to weigh and cake decision to make. Busy times in the kitchen at el castillo.
