This week is going to work a little bit differently because I will be doing a week-long taco cleanse in support of the brave Austin food bloggers that are taco-cleansing for the entire month of September! That means tacos for breakfast, lunch and dinner for me every day for seven straight days. The fam has agreed to join me for a MILD challenge (one day) with intermittent support throughout the week as I try to make good on my HOT promise. Maybe my dinner tacos will be so tempting that they’ll forego silverware and join along with my taco dinners instead. 😉
Monday (aka family taco cleanse day)
Breakfast – Refried Pinto Beans, Potatoes & Soyrizo Tacos
Her Lunch – Black Bean & Cheese Tacos, Fideos, Fruit
Dinner – Potato & Kale Tacos on Homemade Corn Tortillas
Breakfast – Overnight Steel Cut Oats
Her Lunch – Waffles, Fruit & Smoothie
Dinner – Vegetarian Chili, Grilled Corn, Crispy Okra
Taco Dinner – Corn Tortillas, Veggie Chili, Corn & Okra
Breakfast – Yogurt, Granola & Fruit
Her Lunch – Almond Butter, Banana & Honey Sandwich, Fruit, Roasted Beets
Dinner – Chana Masala with Basmati Rice
Taco Dinner – Nan, Rice, Chana Masala
Breakfast – Zucchini Bread & Smoothies
Her Lunch – Frito Pie!
Dinner – Roasted Veggie Sandwiches, Chickpea Salad
Taco Dinner – Whole Wheat Flour Tortilla, Roasted Veggies & Chickpea Salad
Breakfast at 24 Diner
Her Lunch – Mac-n-Cheese, Carrots, Fruit & Zucchini Bread
Dinner – Zucchini Enchiladas
Taco Dinner – Corn Tortillas, Sauteed Zucchini, Rice, Red Enchilada Sauce
The grown ups will be eating leftovers (and tacos) for lunch all week. My breakfasts will more than likely be refried black beans, soyrizo and salsa tacos… on the regular. I’ll just have to wing it on Saturday and Sunday.
