We are running dangerously low on vegetables in the house. We have hot peppers. We have potatoes. We might have half of a small red onion left and a butternut squash. CSA pickup is not until Wednesday and that small stash is going to have be stretched into 3 breakfasts, 3 lunches, 2 dinners and snacks. These are the kinda weeks when I am most grateful for my homemade pantry.

Hoping that is enough to get us through Wednesday.
Also of note… we are exactly 8 days away from the first day of 5th grade. 5th grade, y’all! We’ll be doing lunchtime dry runs for the better part of the week in addition to squeezing in as much fun as we can into this last week of summer.
