I got a really solid start on cooking over the weekend and thought I should take advantage of this moment to talk about what my weekend vegetable prep looks like. A CSA share can be intimidating for the uninitiated – it is A LOT of vegetable to deal with at once, but it is totally possible if you can set aside the time to properly wash and store your vegetables as soon as you get […]

I had a full day of meal prep yesterday, so I am stoked (and stocked) for the week. Also managed to have quite a bit of fun on Instagram yesterday in the middle of it all. Seemed like lots of folks were cooking and getting ready for the week so I was able to find some inspiration for last night’s dinner and the week’s meals. You can find me @thereal_aneelee if you want to take […]

Well, it’s mid-week so I have clearly thrown planning to the side. That said, there is plenty of kitchen action. I have been ogling my newest addition to the kitchen book shelf – Vegetable Literacy – and am re-learning the art of pressure cooking. As far as veggies go, we are just working our way through our leafy greens (there are LOTS of them). They are going in scrambles, grain bowls, smoothies, and anything else we […]

I ended up with a little more variety than originally expected, but we seem to have eaten through way more of our veggies last week than I planned. I picked up a few extra things – cauliflower and an acorn squash from the grocery store to help. I am also trying a completely new (to me) bean this week – the mayocoba. Trying to find my 2015 work-home rhythm so everything else is pretty regular. […]

The weekend was filled with costumes, birthday cake (his) and much cooler weather, so yeah… it was a good one. This week’s vegetarian meal plan includes some of the best that our fall growing seasons has to offer – kale, spinach, peppers (they won’t go away!), cilantro, parsley, onions, spaghetti squash, salad greens, green beans, and radishes. We are swimming in vegetables and I, for one, am excited for warming the house with the kitchen. This […]

We had a busier weekend than expected and the cooler weather triggered all sorts of knitting urges that, unfortunately, were tended to in place of my weekday meal prep. It is going to make for a slightly busier Monday night, but I still think that we can pull off a solid week of homemade meals. Here is what I have tentatively planned: Meals Monday – Seitan con Papes | Frijoles | Arroz Tuesday – Leftovers […]

Picked up my CSA stash yesterday and the kitchen now has Fall oozing out of every nook and cranny. We have greens! I’ll be making my usual batches of beans, roasted veggies, and sauces to help ease dinner and lunch prep during the week later today. Also have my eye on these new(ish) things for the week: Sweet Potato Waffles Quick Pickled Beets French Lentil Salad Miso Soup with Rice & Poached Egg Braised Coconut […]

Thanks for letting me take a week off! We had some lovely family downtime and I feel re-energized after a library visit and some much-needed kneading time in the kitchen. I’m back with a quick list of what I have planned for the week. CSA pickup is on Saturday so we are working with the little we have a left, a few store-bought vegetables (hi, broccoli!) and the pantry. Leaving plenty of room for a […]
