vegetarian meal plan – july 8, 2013

I think we are approaching the halfway mark in the summer and we have, perhaps more importantly, finally reached a constant state of nearly empty fridge. Four meals, 7 days a week with only a couple of meals eaten out is A LOT of food to account for. I can only imagine what those of you with bigger families must have to deal with. I can barely keep up as is…

Oatmeal
Yogurt & Granola
Huevos Rancheros
Smoothies & Bagels
Muffins & Fruit
Black Bean & Potato Tacos

Dinner
Homemade Pizzas
Vegetarian Pho
Potato & Chickpea Stew **
Enfrijolodas or Enchiladas
Kale Fried Rice

Lunch
Summer Veggie Burgers
Black Bean & Sweet Peppers Tacos
Tomato Sandwich w/Arugula & Mozzarella
Chickpea Avocado Sandwich
Fideos

Snacks & Other Stuff
Watermelon Gelatin (look for recipe soon)
Pickled Peppers
Canned Crushed Tomatoes
Enchilada Sauce (for freezing)

My hope is that having some stew in the fridge and plenty of sandwich fixings around will help fill in our second “lunch.” What kinds of things do you like to stock in the summer to make in-between meal eating a little less labor intensive?
