veggie meal plan – march 2, 2015

The sick has got the energy in the house on mute. Naps, audiobooks, podcasts, music, and a fair share of video streaming are going in everyone’s respective corners. We seem to have survived the weekend, but there is much to catch up on and I suspect the 11yo has at least a couple of more days of watch she disparagingly refers to as “sick activities” before she can get back to normal. Good news is that there wasn’t much to see beyond the confines of el castillo this weekend. The weather here is STILL grey and wet and cold. Yay, March! 😉

I am not convinced that this sick is done traveling through the house, so I am going to get us stocked up *just* in case mama isn’t allowed to touch other people’s food later in the week:

Meals
Lentil Salad with Roasted Red Peppers & Lime Vinaigrette* (on greens)
Fideo Seco (for us)
Sopa de Fideos (for her)
Sweet Potato Soup & Quiche
Ravioli Salad** on Kale
Sesame Broccoli + Protein + Grain
Tostadas

Snacks
Quinoa Cupcakes
Oatckakes**
Orange Juice
Grapefruits
Roasted Veggies
Raw Carrots
Hummus
