Happy February from Austin! Apologies for the late meal plan post. It took me a little longer than usual to figure out how to cook through our veggies. Whatever is left of the CSA stash will get used up in stir fries, salads, and breakfast over the next week. I have the following in mind for the next 7-10 days: Meals Spaghetti Squash with Chickpeas & Kale Portabella & Brussel Sprout Salad * Brown Sugar Tofu […]

the “to-try” list

The internet is filled with ideas and things to try and for years I would bookmark recipes or send myself links and then {Clouds part. Sun shines.} I realized that my note taking tool, Evernote, was the perfect archive. I’ll sometimes tag things by season, but for the most part, I just send the link on over and it does all my indexing work for me (article titles, content, ingredient lists, all of it). A couple […]

vegetarian meal plan – week one

First and foremost, hello! It has been ages since I’ve pulled together anything more than a handful of mental notes on “what it would be nice to eat this week” and this meal plan is long overdue. We will be taking advantage of our CSA stash this week which has filled our fridge with greens, and greens, and more greens. I’m sure many of you are trying to get back to healthier fare in your […]

The sick has got the energy in the house on mute. Naps, audiobooks, podcasts, music, and a fair share of video streaming are going in everyone’s respective corners. We seem to have survived the weekend, but there is much to catch up on and I suspect the 11yo has at least a couple of more days of watch she disparagingly refers to as “sick activities” before she can get back to normal. Good news is […]

The temperature is plummeting as I type this post and we are just a *wee bit* miffed about it. 30º may not seem like a big deal in February too most, but this is Central Texas and it was in the 70s just a couple of days ago. Stomps feet. Will be warming the house with lots of soups and baking this week: Meals Potato Soup with Pesto* | Mixed Greens with Grapefruit Vinaigrette Ginger […]

I’ve spent every spare moment this weekend in the kitchen. Washing greens, shredding cabbage, roasting veggies, and getting the fridge armed with basics (grains, legumes, dip, salad dressings, etc.) makes it a kazillion times easier to reach for something reasonably healthy when the hunger pangs strike. My sweet tooth this week will be satiated with homemade popsicles (I am ignoring the cold in the forecast) and our stash of homemade preserves. Breakfast Grains & Kale […]

I got my weekday meal prep off to a late start today, so I am pulling my meal plan together with all sorts of stuff simmering and baking and cooling in the background. A visit to the doctor this past week has me thinking that it may be time to shake our food routine up, so we can inch back towards more mindful and healthy food choices at home. Hoping that entering the week with just a handful of […]

I had a full day of meal prep yesterday, so I am stoked (and stocked) for the week. Also managed to have quite a bit of fun on Instagram yesterday in the middle of it all. Seemed like lots of folks were cooking and getting ready for the week so I was able to find some inspiration for last night’s dinner and the week’s meals. You can find me @thereal_aneelee if you want to take […]

Well, it’s mid-week so I have clearly thrown planning to the side. That said, there is plenty of kitchen action. I have been ogling my newest addition to the kitchen book shelf – Vegetable Literacy – and am re-learning the art of pressure cooking. As far as veggies go, we are just working our way through our leafy greens (there are LOTS of them). They are going in scrambles, grain bowls, smoothies, and anything else we […]

I ended up with a little more variety than originally expected, but we seem to have eaten through way more of our veggies last week than I planned. I picked up a few extra things – cauliflower and an acorn squash from the grocery store to help. I am also trying a completely new (to me) bean this week – the mayocoba. Trying to find my 2015 work-home rhythm so everything else is pretty regular. […]
