vegetarian meal plan – july 16, 2013

veggie meal plan |

I am not taking on any canning projects this week.

This is the message that I am whispering to myself as I walk past produce at the market this week. No bulk orders. No last-minute whims that end in 15 lbs of… anything. I need to get excited about making dinner again and that is only going to happen if my hands and feet aren’t sore from having canned the night before.

Eat Your Books is helping me get jazzed about all the possibilities that my cookbooks and favorite blogs hold. If you haven’t stumbled upon it yet, it is definitely worth checking out. I finally upgraded from my free account and now have the ability to type in any ingredient into the search engine and out shoots a list of all the recipes that I have at my disposal in my personal cookbook collection. Yowzers! So much better than leafing through each and every one of them!

Shall let you know how my week of making DINNER pans out. Hehe. 😉

Pizza with Roasted Red Pepper Sauce, Leeks & Olives* | Arugula Salads
Roasted Veggie Sandwiches | Tomato & Leek Quinoa**
Tacos (Frijoles Charros, Shredded Zucchini & Soyrizo) | Grilled Mexican Corn
Dal Bati Churma | Basmati Rice
Eggplant Gratin | Pasta

Snacks and Other Stuff
Popsicles (various flavors)
Pumpkin Bread (have to use the last of my freezer stash)
Pizzas for freezer
Tamales are a big maybe but possible

* Field of Greens
** The Bon Appetit Fast Easy Fresh Cookbook

This post is in no way, shape or form sponsored. I rave about Eat Your Books because I really, really like Eat Your Books and paid for my upgraded account (only $25 for the whole year!) with my own money.
