There was no okra or zucchini in our CSA box! We do have lots and lots of greens, so my goal this week is to get it into every meal.

Meals
Roasted Tomato & Fennel Spaghetti | Spinach & Apple Salad
Tortilla Soup (which I should really post a recipe for)
Kale & Feta Quiche | Mixed Lettuce with Sourdough Croutons & Lemon Vinaigrette
Tofu & Quinoa with Green Beans
Vegetarian Pho

Everything Else
Banana Oat Muffins
Black Olive Hummus
Pumpkin Puree
Roasted Sweet Potatoes

After asking for help with my sweet potato stash, I’ve come to the conclusion that it will be best to roast and freeze a large portion of it so that I can figure it out later. Maybe tamales?

    Roasted tomato and fennel spaghetti sounds delicious! I just may have to add something like that to our menu, too, since we have fennel to use and I have been uninspired.

      i’ve gotten into the habit of roasting my fennel and pureeing it as soon as i get home. makes it easier to throw a dollop into a sauce or soup and makes it WAY more mellow, which is a good thing in mine (and my daughter’s) opinion
