First and foremost, accept my apologies. We have been enjoying the oodles of summer veggies and I’ve been cooking sooooo much that I’ve rarely had energy left to write things down. The life that pulses around our kitchen seems to have steadied and so I finally feel like I can take a sec to THINK about what comes next.
We only have other 5 dinners to cook before our next CSA pick-up, but with the fam’s current 4-hour feeding schedule (um, yeah) – a light breakfast, lunch, mid-afternoon meal and then dinner – I think that the seemingly long list that follows just might be enough.
Breakfast:
Oatmeal Buttermilk Pancakes with Fresh Berries & Honey
Migas | Black Bean Puree | Honeydew Slices
Yogurt | Homemade Granola | Fresh Peaches
Smoothies | Banana Oat Muffins or Banana Nut Oatmeal
Steam-Fried Eggs and Potatoes
Dinner:
Vegetarian Stir-Fried Rice
Broccoli Cheddar Quiche | Steamed Okra with Lemon Vinaigrette | Quinoa
Greek-Style Lentil Burgers
Kadai Masala
Zucchini Pasta with Blue Cheese Pesto
Thai Tofu & Winter Squash Stew
Extras:
Lemonade
Trial Birthday Cake
Crackers
Hummus or Baba Ghanoush
Tomorrow will be a two-meal cook day (lunch and dinner) and we’ll be munching on our leftovers for the remainder of the week for the two mid-day meals. Geez!
Be kind. Be patient. Turn off your oven.
