when the kitchen starts to run bare | meal plan | feb 8, 2011

These last few days before our CSA pickup are the toughest to plan for. We are usually down to the last of our root veggies (sweet potatoes and turnips in this instance), our pantry of grains and legumes, and the few other fruits and veggies that I’ve picked up at the grocery store.

So, this is what I think I can pull together for the next couple of days:

Herb-Crusted Tofu | Spaghetti
Lentil Soup | Roasted Root Veggies with Feta

Baking:
Olive Oil Bread
Vanilla-Almond Granola
Banana-Oat Muffins

I may give in later today and buy a bunch of spinach to help round out our meals. Spinach salads to go with the spaghetti and greens simmered in that lentil stew would be lovely.
