summer break has begun

My darling girlie is home with me for nearly three whole months (!!!) and I am ready for the lounging, reading, knitting and pool dips that fill our summer days. We’ll be enjoying our wonderful Austin as much as the heat allows us except for an escape to the beach at the very end of the summer.

In the summers, I trade my love of cooking for time spent with my daughter. I do my best to get my heavier cooking done in the morning so that I have the day free to spend with her. This is our first week, so I shall keep the planning to a minimum as we ease into our new cooking and eating habits.

Planned Meals:
Grilled Veggie Pizzas
Spinach & Feta Quiche
Fancied-up Rice and Beans
Pitas with Hummus, Cukes, Sprouts, Tomatoes & Olives
Romaine Salad with Olives, Sourdough Croutons & Lemon-Garlic Vinaigrette
Quinoa, Summer Squash Medley with Fresh Herbs & Grilled Tofu

Snackage:
Eggplant & Roasted Red Pepper Dip
Banana-Almond Milk Smoothies
Peach Smoothies
Zucchini Muffins
Horchata Popsicles
Salsa
Guacamole

The heat really effects our appetites in the summer. We crave light meals and tend to eat way more frequently because of it. Snackage should help, but I’m gonna have to be careful to not spend all my energy cooking snacks so that we can get some balanced plates together for sit-down meals.
