We’ve got a really busy week ahead of us and some unexpected hiccups that mean my husband will be out of town for a few days. My daughter and I do lots of snackage and quick meals involving noodles when he’s not here. It’s easy enough to wing and the last thing I want deal with, when it’s just the two of us, is difficult dinners that involve torturous bites of greens (for her) and constant requests for “one more bite.” I stick to stuff that she likes for my benefit, more than hers on weeks like this.
I’m not really gonna put a plan together for the week, but I do know that I’ll be working from the pantry. I have these veggies and fruits lying around to work with as well:
Spinach
Lots of tomatoes, onions and cilantro
Some carrots
Chard
Bok choy
A little bit of kale
The last of my beets
Grapefruits
Let’s see what happens. I’ll do my best to update my twitter feed with #fordinnertonight as it comes together.
I am also very sad to report that I was not able to attend my first swap this weekend as planned. Nothing stops us more in our tracks than ailing parents and unfortunately, this weekend’s hiccup is in that vain. The three of us are healthy and strong and capable of slowing down enough to help, even if only temporarily. We are taking my mantra very much to heart to this week:
Be kind. Be patient. Eat well.
* Black bean burger patties pictured above (before flattening and cooking). I may need to bust them out of the freezer this week. Hmm.
