A day late ’cause I couldn’t quite face the computer yesterday. After a few weeks of lots and lots of work, I am ready to hunker down in my kitchen in my pajamas and apron. I added a loose breakfast plan to the mix since the 8yo has been complaining just a wee bit about the lack of variety. Also adding some bread and baking; I can feel the hot weather creeping in and I may not have much time left with the oven.

Leftovers
Stovetop Mac and Cheese

Brussel Sprout Green Wraps
Mixed Greens Salad with Beets and Orange
Chana Masala & Basmati Rice
Soba Noodle Salad & Slivered Kohlrabi
Curried Spinach Soup with Toasted Coconut*

Breakfast
Wholewheat Applesauce Muffins
Buttermilk Biscuits
Egg & Cheese Sandwiches
Black Bean & Potato Tacos
Smoothies in every color and flavor

Other Stuff
Hummus
Oat Bread
Granola Bars
Chocolate Chip Cookie Dough

* Not sure if I have enough spinach left from my CSA batch for this, but it sounded to yummy to pass up. It’s from Annie Somerville’s Field of Greens and it might be worth an extra trip to the Triangle Farmer’s Market on Wednesday. And the carrots, pictured above? Those aren’t going to make it into any meals. They’re getting snacked on in raw form throughout the week.
