I had a really great day that I chose to dedicate almost entirely to the kitchen. I scrubbed the stove. I cleaned counters and back-splashes. I baked. I made tonight’s dinner with not a bean in sight.
The Cauliflower, Spinach & Potato Stir-Fry with Coconut Milk that we’re having is from Deborah Madison’s Vegetarian Cooking for Everyone. Even now, I can turn to it with confidence on days when I have no idea what to make. Dinner magic with leftover seasonal veggies achieved.
