Goodness! I still have mountains of summer squash around! I don’t usually struggle too much with what to make (it can be shredded and put in everything from migas to risotto to baked things), but I do start getting a bit bored by my usual rotation by… you know… OCTOBER.

Hopefully the following list will help you power through the last of it:

Zucchini Toasts

Zucchini & Asparagus Strata

Savory Zucchini & Parmesan Waffle

Summer Squash Pasta w/ Green Goddess Dressing

Zucchini Quinoa Burgers

Couscous Salad with Preserved Lemons & Olives*

Zucchini-Radish Slaw for your tacos!

Charred Mexican Zucchini

Sesame Zucchini Chips

Cardamom-spiced Zucchini Bread**

Thinking that this latest cold front will help my CSA box make the final jump into Fall, but who knows! It could be 90º next week!
