Between a busy homeschooling schedule, working from home, and managing our latest addition, variety has been pretty tough to manage in the lunch department. If you look at my meal logs you’ll notice that the word leftover is scribbled almost all the way down the column. There is nothing wrong with leftovers. It has taken me a lifetime to get to this place, but truthfully… there is nothing wrong with leftovers. But variety hurts no one and can really help you keep at it.
Everyday Vegetarian is awesome if you are looking for some variety without fuss. I got a review copy a few months ago and have been surprised by it over and over again. Bowls, salads, loads of breakfast ideas, soups, sauces, and some great pizza shortcuts to help satiate those hungry cravings on the way home. I’ll be cooking lots from it next week so stay tuned for a meal plan and a recipe to help you kick your breakfast/lunch game up a notch.
